Slice beef thinly across the grain and cut into 1 1/2" long strips.
Put the meat in a shallow dish with 2 TBS. peanut oil, soy sauce, sherry, sugar, garlic, ginger, cornstarch and water. Mix to coat.
Heat 2 TBS of oil in a wok at 350 F. Add the Japanese style vegetables and stir fry for 3-5 minutes or until the vegetables are tender crisp.
Remove from the wok and set aside.
