Steps
Sequence Step
1Cut small slits in the beef. Cut the garlic into slivers and stuff the slivers into the slits.
2Coarsely chop the onion, celery and carrot. Place 2 TBS butter, and vegetables into a large heavy bottom pot or Dutch oven and sauté until softened. Remove from pot.
3place remaining butter and 2 TBS vegetable oil in the pot. Turn up the heat and when shimmering and the roast and brown on all sides. Remove the roast from the pot
4return the vegetables, bouillon, 1/2 cup water, 1/4 cup of red wine and tomato paste. Whisk to dissolve the bouillon and tomato paste. Return the meat to the pot.
