Preheat grill or skillet to medium high heat

Start 4 quart pot to boil with 2.5 cups water and 2 tbsp butter.

Coat thawed tilapia in olive oil and lemon pepper.

Rinse black beans thoroughly.

Add rice and beans to boiling water and cover. Let sit for at least 5 minutes.

In a medium sauce pan, combine cherry tomatoes (sliced in half), 1 tbsp butter, olives (drained and sliced thinly), and 4 crushed garlic cloves.

Grill or pan-fry fish for 3 minutes on each side.
