Heat olive oil in a large skillet on high to medium heat and stir in the mushrooms, bell peppers, and green onion for about 3 minutes. Place spinach in the pan and allow it to wilt, then add the egg mixture.

As eggs are cooking, lift the sides allowing the runny part to go underneath. Cook until no longer runny.
