1slice the mushrooms, dice the green onions and red bell peppers and tear the spinach into smaller pieces.
2Beat the two eggs in a small bowl and mix in the salt, pepper, and chili flakes.
3Heat olive oil in a large skillet on high to medium heat and stir in the mushrooms, bell peppers, and green onion for about 3 minutes. Place spinach in the pan and allow it to wilt, then add the egg mixture.
4As eggs are cooking, lift the sides allowing the runny part to go underneath. Cook until no longer runny.
