Combine the flours, Truvia, baking powder, and salt in a medium bowl and stir to mix well. Combine the buttermilk, egg, egg whites, 3 teaspoons of the oil and the vanilla in a separate bowl and stir to mix well. Add the buttermilk mixture to the flour mixture and stir until just moistened.

Preheat the waffle iron and lightly brush with one teaspoon of the remaining oil. Spoon about 1/4 cup of the waffle mixture onto the waffle iron, spreading the batter to the edges. Cook until the steaming stops (roughly 4 to 5 minutes. Top with your favorite toppings and enjoy!
