| 1 | Bruise lemongrass by rolling with rolling pin. | 2 | Bring lemongrass and 1/2 cup water to boil. Remove from heat and sit for 10 minutes. Strain into large glass. | 3 | Heat a large skillet over medium high heat. Toast shallots, scallions, chile, and garlic for 8-10 minutes. Remove skins from garlic and coarse chop ingredients. | 4 | add garlic, shallots, scallions, chile, and ginger to lemongrass infusion. Stir in fish sauce, lime juice, and sugar. | 5 | Remove peel and pith from Pomelo. Cut along membranes to release segments. Squeeze juice from membranes into bowl and discard.
