Bruise lemongrass by rolling with rolling pin.

Bring lemongrass and 1/2 cup water to boil. Remove from heat and sit for 10 minutes. Strain into large glass.

Heat a large skillet over medium high heat. Toast shallots, scallions, chile, and garlic for 8-10 minutes. Remove skins from garlic and coarse chop ingredients.

Remove peel and pith from Pomelo. Cut along membranes to release segments. Squeeze juice from membranes into bowl and discard. Tear segments into large pieces and mix into sauce.

Serve over Soy Sauce and Citrus Marinated Chicken and top with Cilantro.
