Steps
Sequence Step
1Bake tortillas at 350 for 8-10 minutes or until crisp. Break into pieces and set aside.
2Heat oil over medium heat. Add onions, carrots, and celery. Stir frequently until onions are translucent.
3Add garlic and tomatoes. Continue cooking 2-3 minutes until tomatoes are soft.
4Combine vegetables and 2 cups tomato juice in food processor or blender. Blend until smooth
5Pour blended vegetables into large sauce pot or stock pot.
6Add remaining juice, broth, chicken, oregano, chili powder, salt and pepper. Bring to a boil.
7Reduce heat and simmer 10 minutes.
8Serve warm, topped with crisp tortilla pieces, cilantro, cheese, and avocado (chunked or creamed for preference).
