1Mix eggs with tarragon, salt and pepper; set aside.
2Lightly spray pan with cooking spray. Add vegetables and cook for 2 minutes, until soft.
3Pour in eggs, cover and cook until firm.
4Sprinkle with cheese. Cook until cheese melts.
