Preheat over to 250.

Place olive oil in a heated pan.

Cook vegetables until they are sauted.

Add salmon and remove from heat.

Place tortillas on cookie tray and preheat in oven.

Place some cheese on one side of each tortilla.

Put half of the sauted mixture onto the cheese.

Put the remaining cheese on the top and fold over the tortilla.

Bake until cheese is melted.

Cool for a few minutes and cut in half and serve.
