Combine dry ingredients and mix thoroughly.

Add water and mix just enough to wet flour.

Cover and let sit for twelve to eighteen hours.

Pre-heat oven to 500 degrees.

Place risen dough on a floured surface and fold over into simple ball.

Place dough in covered pre heated pot and put in oven.

Remove lid after fifteen minutes.
