Saute onions and mushrooms in a nostick pan with a little water until soft

Add chicken broth and spinach. Cook until broth evaporates and spinach is wilted.

Put vegetables in bottom of pan sprayed with nonstick cooking spray.Sprinkle with half the cheese.

beat eggs, egg whites, yogurt, and seasonings until well mixed. Pour over vegetables. Sprinkle with remaining cheese.

Bake quiche at 325 degrees for approx 40 minutes until set.
