Beat eggs, egg whites and soy milk together, while heating non-stick pan.

Pour into heated pan, cooking on medium heat for 1 minute. Turn heat down to medium-low.

When omelette is firm but not fully cooked, turn over in pan, sprinkling dill and goat cheese on top.

Turn heat off and cover the pan.

To serve, divide into three sections and top each with 1/3 of the smoked salmon and asparagus spears.
