Rub chicken with salt, pepper, cumin and garlic. Brown in skillet on medium, 10-15 minutes.

If using rice mix which calls for browning in butter before adding water, complete that step and then put in a greased casserole dish (it will be runny, but the completion of the cooking will take place in the oven instead of on the stove). Mix in black beans and tomatoes.

Place chicken on top of rice in the casserole dish, then cover with salsa and cheese (optional). Bake 15 - 20 minutes or until rice is fully cooked.
