begin mixing egg whites and add salt,tartar and lemon juice. Mix until the whites begin to form. then slowly add sugar. look for a glossy look then dip your finger in the meringue and rub the mixture between your thumb and index finger. It should feel smooth. If it feels grainy, mix a little longer.
Add meringue to your fruit sauce. Fill sugar coated souffle dish and then rub your finger around the rim so that souffle rises to full potential. Bake the souffle at 350 degrees for 5 - 6 minutes.
