Coat medium sized pan with cooking spray

Add the broccoli, onion, carrot, celery, water chestnuts and spinach. Cook on medium heat until the spinach has cooked.

Add the broth, soy sauce and rice to the vegetable mixture and simmer until the liquid is gone.
