Recipe Description This is a recipe from Prevention Magazine which I changed slightly. I did not add the 3 1/2 ounces of smoked Gouda in an effort to reduce calories.

cuptomato sauce - 8 oz can

cups (8 fl oz)water

small (5-1/2" long)carrots diced

stalks large (11"-12" long)celery, diced

cupsgreen lentils, rinsed and picked over

cupscanned black beans, rinsed an drained

tablespoonscilantro, fresh, chopped

2Add lentils and water. Bring to a boil. Reduce heat and simmer for 20 minutes. Add tomato suace, carrots, and celery. Simmer an additional 10 minutes. Add black beans and cook until vegetables are tender, about 5 minutes.
3Stir in cilantro. Season to taste with salt and black pepper. Top with a dollop of low fat or fat free sour cream if desired.
