| 1 | Preheat oven to 350 and prepare 12 muffin cups with cooking oil spray or muffin liners. | 2 | In a bowl, mix together flour, baking powder, baking soda, cinnamon and salt. Add the walnuts and toss to coat them well. | 3 | In another bowl, whisk the figs, banana, brown sugar, melted butter, egg beaters and vanilla until well blended. Add to dry ingredients all at once. Fold in until evenly moistened. | 4 | Divide batter evenly among the 12 muffin cups. | 5 | Bake at 350 for 20-22 minutes (until tops are lightly brown and a toothpick comes out clean). | 6 | Cool on a wire rack before removing muffins from tin. |
