I was looking for a vegetarian recipe for my son who can't eat cheese. (This could also be made vegan). I am estimating prep and cook time and number of serving.

Melt butter in pot.

Add the vegetable broth and wine and let the mixture simmer for 10 minutes.

Let the mixture cool off for 10 minutes and pour into blender.

Puree mixture.

In the fondue pot, mix 1/2 cream with the cornstarch.

Mix well and add the remaining cream and and mushroom puree.

Add the cayenne pepper and salt and pepper to taste.

Transfer to fondue pot.

Dip cubes of cheese, bread for vegetables into fondue.
