cupsV8 Juice low sodium

cup (8 fl oz)water

cupsSpinach, fresh baby chopped

can (16 fl oz)tomatoes canned, diced

medium (2-1/2" dia)Onion, chopped

cups crumbledfeta cheese

teaspoonoregano- to taste

dashpepper, to taste
Steps
Sequence Step
1Bring water mixed with v8 juice to boil and add couscous and simmer until aldente
2Pour all remaining ingredients in a large bowl and stir
3Pour Hot Couscous over other ingredinets and toss to mix.
4Pan and Could garnish with Fresh diced tomato. Shrimp, Chicken could easily be added to the top of this dish. Can be served hot or cold.
