Recipe Description Recipe found on AllRecipes.com! Made a few changes though. Instead of 1 cup white flour and 1 cup whole wheat flour, I use 1/2 cup white flour and 1 and 1/2 cups whole wheat flour. I also leave out the walnuts. Finally, I increased the servings quantity to 16 instead of 12 to create more of a snack sized muffin versus a meal sized muffin.

1Preheat oven to 350 degrees F (175 degrees C).
2Grease 12 large muffin cups.
3Mix brown sugar, all-purpose flour, whole wheat flour, cranberries, coconut, flax seed, cinnamon, baking soda, and salt together in a bowl.
4Add grated apple and carrots; stir to combine.
5Add pineapple, vegetable oil, applesauce, pecans, eggs, and vanilla extract; stir until just combined.
6Pour batter into prepared muffin cups.
7Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 35 minutes.
