Saute red pepper, and spinach in pan till cooked to desired doneness. Can spritz with olive oil.

Whisk eggs and egg whites together and pour over peppers and spinach.

Cook till eggs start to set then add cheese and seasonings to taste. Salt, pepper, basil or italian seasoning.

Serve hot, with salsa if desired.
