Add Beans (use 3 cans of your favorite... for black beans, rinse them first). ALso add the canned diced tomatoes (I buy the tomatoes with jalapeno peppers. The fire roasted tomatoes are good too.

Add the spices (cumin, oregano, and chili powder to taste) Note that I often add the cumin and chili powder to the beef and onions in step 1 to prevent clumping )

Add the chopped green pepper

Simmer for 45 minutes. (Add 1 T of unsweetened cocoa during the last 15 min of cooking.. note that it adds a smoky flavor and a great deep color.. you won''t taste the chocolate)

Turn the burner off and mix in 1 chopped avocado.
Make about 10 cups.
