1Water saute the onion, garlic, chipotle pepper, salt and spices together until onion is tender; about 5-7 minutes. Add remaining ingredients and simmer for 45 minutes. Check after 30 minutes and add more vegetable broth or water if necessary. Serve hot and garnish with fresh cilantro
