A favorite of mine. This is veratile. Cajon or Mexican or Itlalian depending on seasoning.

Combine lentils,vegetable broth, tomatoes and seasoning in large pot and bring to a boil. Turn doen heat to a simmer

Saute carrots ina large non-stick skillet with a little stock then add onion

Adjust seasoning. This is when you can change it up by adding favorite salsa or Cajon seasoning, or basil.
