In a small bowl combine flour and baking soda. Next, in a medium bowl combine Greek yogurt, egg yolks, milk, almond extract, poppy seeds, and lemon juice. Stir to combine. In separate bowl whip egg whites until stiff peaks form, this took me a few minutes with my hand held blender. Combine flour and baking soda mixture with the wet ingredients and stir until just combined. Add the whipped egg whites and gently fold them in the batter. Use a 1/4 cup measuring cup to evenly measure out the pancakes mixture. Cook on medium heat. ENJOY
