Break out and discard the end wing tip from each using a heavy knife. Break the wing from the drumette by hand.

Prepare the marinade by mixing honey, mustard, lemon juice, zest, thyme and garlic powder. Drop the wings in and turn around till it is coated well. Store the wings in a ziplock bag for between 1 and 24 hours - longer the better.

Place a bed of applewood chips, soaked over night, in a tray on one side of barbecue grill. Close and switch on the grill for a few minutes to generate a lot of smoke. Open and place the marinated wings on the other side where there is no heat but only smoke. Leave for 3 hours while the wings smoke. .
