Boil the potatoes gently for 30-40 minutes. Don''t overcook. Peel, and place it on a worksheet unto a mound. Add 1 broken egg to the top and work into the flour into dough. Add the flour and knead. Sprinkle some flour if necessary. Separate the dough into 6 parts. Roll each into a rope of 1/2 in diameter. Cur the rope into 1/2 in pieces. Press each piece on to a fork with your thumb. The other side will be pressed into a concave surface by your thumbs. A great show to absorb the sauce. Spread the gnocchi on a flat baking. Drop into a pot a of boiling water. Gently stir. Remove. Eat immediately. You may store unused gnocchis in a refrigerator.
