1This recipe is a combination of Filipino and Mexican cuisines. Mix 1 1/2 cup ground pork 1 1/2 cup ground beef in a bowl. Knead. Add 1 tsp coarse salt. Knead along with ½ tsp pepper, 2 tbsp cilantro, 1 egg white and 1/3 cup rice. Mix well. Roll onto little balls. Ad 1 tbsp olive oil to a heated pan. Add 1 medium onion, 1 ½ tsp minced garlic, 2 tbsp tomato paste, Cook for 2 minutes on low heat. Increase the heat to medium high and add ½ cup chopped onion and ½ cup cubed carrots, Add 1 16 oz can of chicken broth, 1 16 oz can of beef broth and 3 cups water. Drop in 2 whole Serrano peppers. Boil. Add 1 cup chopped tomato , 1 cup cubed zucchini and meat balls. Simmer for 20 minutes (the bowl must be large so the balls do not stick).
