Cook 5 strips of bacon until crispy. Crumble the bacon and set aside.

Slice the mushrooms and place the evenly on the bottom of the pan. Sprinkle the mushrooms with the Italian seasoning. In a medium bowl, whisk the eggs. Pour the eggs over the mushrooms in the pan.

Top with the crumbled bacon. Bake for 25 to 30 minutes, or until knife inserted near the center comes out clean. The quiche will puff up while baking and deflate when removed from the oven. Let cool for 5 to 10 minutes before cutting and serving.
