1Put pork hocks into a large pot and begin to cook over a high heat to brown while chopping and adding other vegetables.
2Add carrots, celery and onions and continue to brown for five minutes.
3Rinse the beans thoroughly and add to pot. Lower the heat to simmer.
4Add the remaining ingredients and the water and cook for 2 1/2 hours.
