Boil the rice in water, set aside.
Pour the sesame oil into a skillet on medium heat. When the oil starts sizzling, add the frozen peas and carrots. Let them cook until softened, then push them to the side. Add in the eggs, one by one. Stir the eggs and veggies around until all are cooked.
Slowly add the rice, then add the soy sauce. You may need to adjust the amount of soy sauce depending on your tastes.
