| 1 | Carefully remove stems from 6 mushrooms. Finely chop stems and remaining 1 mushroom. | 2 | Spray pan with cooking spray. Add mushrooms, minced garlic and salt and pepper to taste. Cook over medium heat until softened, about 5 minutes. | 3 | Add cream cheese and parmesan. Remove from heat, and allow cream cheese to soften. | 4 | Line a baking dish with non-stick foil and put in mushroom caps, flat side down. | 5 | Stir cream cheese into mushroom mixture, once it is melted. | 6 | Spoon cream cheese mixture into mushroom caps, about 2 tsp. for each cap. | 7 | Bake at 400 for 10 minutes and if desired, broil for an additional 1-2 minutes, to brown the top. |
