Steps
Sequence Step
1Whisk together egg, yogurt, 3-4 drops vanilla stevia, and cinnamon until frothy.
2Stir in flax meal and finely minced apple until mixed. Let sit for 2-3 minutes to congeal a little bit.
3Preheat small omelette pan over medium-high heat. You can use some coconut oil, but if you have a nonstick pan then you won''t need it. Spoon the batter into the pan and spread it into a pancake shape if it doesn''t spread on its own.
4Cook 3-4 minutes, then use a spatula to flip just like you would an omelette or large pancake. Cook another 2-3 minutes. It should be nicely browned on both sides.
5Serve with natural peanut butter, or my favorite - plain yogurt with raspberries!!
