Steps
Sequence Step
1Preheat oven to 350 degrees F. Spray three 8x4 loaf pans with a non-stick cooking spray.
2In a large bowl mix dry ingredients.
3In a medium bowl mix wet ingredients.
4Add wet ingredients to dry ingredients and mix well.
5Add chopped cranberries
6Pour batter into sprayed pans. Divide nuts into 3 parts and press into top of batter.
7Bake at 350 degrees for about 40-45 minutes in a 8x4 pan. Bake time may vary depending on your oven. Bread is done when a toothpick is inserted into center and it comes out clean. Cool 15 minutes in pan and then transfer to wire rack. Eat warm or cool completely and store in refrigerator or wrap tightly in plastic wrap and foil before freezing.
8Variation - This will also make 36 muffins. Bake 350 degrees F 17 minutes. Bake time may vary depending on your oven. Spray muffin tin with non-stick cooking spray. Don''''t use paper liners. They stick to muffins. This changes the calories to 100cal. 1gm. fat 1gm. fiber per muffin.
