Steps
Sequence Step
1Grind Wheatberries
2Mix half of whole wheat flour (approx. 6 cups of ground wheatberries) with water and yeast. Cover and rest for 30 mins.
3Add in remaining ingredients except flour. Mix.
4Add in remaining flour until dough is desired consistancy. Should be slightly tacky.
5Knead until gluten has developed. Approx. 12-15min in stand mixer.
6Divide into 4 parts. Each quarter makes a 4"x8" loaf or (2) 10"-12" pizza crusts.
7For bread: form dough into loaf. Place into greased bread pan and allow to rise 30-60 min. until at least 1" above top edge of pan.
8Place in cold oven and bake at 350 degrees for 35 min.
9Remove from pan and cool on rack.
10For Pizza: allow dough to rise in greased covered bowl for 30-60 min until double in size.
11Place pizza stone in oven and preheat to 350 degrees.
12Divide dough in half. Roll each to desired size. Fold edges if desired. Bake on stone for 6 min.
13Flip pizza crust on stone. Add toppings. Bake until desired doneness approx. 12-18 min.
