| 1 | Spray shallow Pyrex baking pan with non-stick spray. | 2 | Spread 16 ounces of frozen O''Brien potato mixture on the bottom of the pan like a crust. | 3 | Crack 12 eggs into a large bowl, mix in milk and beat well. | 4 | Add salt, pepper and dehydrated onions to the egg mixture and mix in. | 5 | Sprinkle ham and chopped sweet peppers over the potato mixture. | 6 | Pour egg mixture over the potatoes, ham and peppers. | 7 | Sprinkle parmesean cheese over the egg mixture. | 8 | Cover the pan with foil. | 9 | Bake at 350 degrees for 35-40 minutes. Remove foil and continue to bake for 10-20 minutes. Enjoy! |
