| 1 | Heat butter and oil in skillet | 2 | flour the fish on both sides and season with salt and pepper | 3 | fry fish in skillet for at least 5 minutes per side, depending on thickness of fish; remove from the pan and keep warm | 4 | In same skillet, add the onion, tomatoes and peppers; saute for 3 minutes. | 5 | Add the fish sauce and continue cooking for 3 minutes. | 6 | Adjust seasonings to taste. | 7 | Combine cornstarch with a little cold water to thicken; add to skillet.
