Steps
Sequence Step
1Saute onion and garlic in olive oil.
2Put in a pot and add beans, tomato juice, vegetable broth, corn, tomatoes, sweet potato, bell pepper, lemon juice, lemon zest, and spices.
3Simmer on low until sweet potato is tender. Add in dried fruit and spinach leaves. Stir and serve.
