1CHANGE 1 TM 10-412 PAN: 18 BY 26-INCH SHEET PAN TEMPERATURE: 350 F. OVEN 20 PORTIONS PER PAN. PREPARATION INSTRUCTIONS: THAW HENS UNDER REFRIGERATION. JUICE LEMONS TO GET INDICATED AMOUNT OF JUICE FROM FRESH LEMONS. 1. REMOVE NECKS AND GIBLETS. WASH HENS (INSIDE AND OUT) THOROUGHLY UNDER COLD RUNNING WATER. DRAIN WELL; PAT DRY.
2USING SHARP BONING KNIFE OR CLEAVER, SPLIT HENS IN HALF LENGTHWISE.
3PLACE EACH HALF, SKIN SIDE UP, ON PANS.
5COMBINE SALT, GARLIC, PEPPER, PAPRIKA, ONION POWDER, CELERY SEED, POULTRY SEASONING, AND CRUSHED BASIL. MIX WELL. SPRINKLE 8 TBSP MIXTURE EVENLY OVER HENS IN EACH PAN.
6BAKE 1 TO 1 1/4 HOURS OR UNTIL DONE (180 F.). [CONVECTION OVEN 325 F. 40 MINUTES-HIGH FAN CLOSED VENT] BASTE WITH COOKING JUICES BEFORE SERVING.
