1 | Quarter washed leeks lengthwise and then cut into 1/2" pieces, leaving about 1" of the bulb. |
2 | Chop 1/2 of a medium yellow onion roughly. |
3 | Melt butter into a medium or large soup pot. |
4 | Add leeks and onion to pot with melted butter. Cook with the lid on until soft, stirring occasionally. |
5 | Peel then chop potatoes into 1 inch cubes. |
6 | Add potato chunks to pot and cook about 2 minutes, stirring. |
7 | Add vegetable broth and salt to pot. |
8 | Let simmer covered for approximately 40 minutes. |
9 | Remove from heat and mash with a potato masher, or puree in parts in a blender. |
10 | Add half and half and pepper and serve. |
