Amt. Measure Ingredient
1
1/2
cupsBob's Red Mill
1
ouncerice puffed cereal
1/2
oz (20 halves)pecans
2
tablespoonshoney
1/4
cupapplesauce natural
1/2
small box (1.5 oz)raisins, seedless
1/8
cupcherries, dried
1/3
teaspooncanola oil
Steps
Sequence Step
1combine oats and puffed rice on pan. Bake in 350 degree oven for 30 minutes. Put on parchment paper for easy transfer.
2Meanwhile, mix honey, oil, apple juice (4 oz applesauce), spices (cinnamon, ginger) and vanilla (0.5 tsp) together in a cup. When oats and puffed rice are done, spoon into a large bowl; set pan aside. Add almonds to cereal mixture and stir to combine. Pour honey-spice mixture over cereal mixture and mix thoroughly to distribute and coat completely; spread mixture back over pan.
3Return pan to oven and bake for 15 to 20 minutes more, stirring every few minutes. Remove from oven and spoon back into bowl. (Note: Be careful that granola doesn''t burn - especially cereal along sides of pan.) Stir raisins and cranberries into mixture; let cool. Store in an airtight container. Yields about a quarter cup per serving.
