Recipe Description This is a awesome sweet light moist muffin. It is fairly low on calories and full of flavor. To change it up you can leave out the cinnamon and chopped apple and add 1 tsp of lemon extract for a lemon poppyseed muffin.

Steps
Sequence Step
1Mix together apple sauce, milk, splenda, egg, vanilla and poppyseeds.
2Sprinkle whole wheat flour, oat flour (ground oats), baking soda, baking powder, salt, cinnamon, and chopped apple on top of wet ingredients and mix together.
3Spray muffin tin with non stick spray
4Bake at 425 for 20 min or until toothpick comes out dry
5I use regular 1% milk (no vit.A added). Oat flour can be made by grinding old fashioned oats(not quick cooking kind) in blender. Approximately 1 1/2 cups of oats to make 3/4 cup of flour.
