Amt. Measure Ingredient
2
cupswhole wheat flour
1
teaspoonbaking soda
1
1/2
teaspoonsbaking powder
1/2
tablespoonsalt
1/3
tablespooncinnamon, ground
1/3
tablespoonorange peel, raw
1/2
cupsugar
1/3
cup, packedbrown sugar
1/2
cupbutter, softened
2
largeeggs, beaten
1
3/4
cups, mashedmashed bananas
1/2
cupmaple syrup
1/3
tablespoonvanilla extract
Steps
Sequence Step
1Preheat oven to 350 degrees
2Line muffin tins with paper liners
3Combine first five ingredients (dry)
4In a large bowl, cream sugars with the butter until light and fluffy
5Add eggs, banana, maple flavoring and syrup until combined thoroughly
6Begin to fold in dry ingredients in 3 stages, making sure each is incorporated before adding more
7Use a 2” ice cream scoop to fill each liner exactly 2/3 full for average size muffins. No batter drippings all over the counter or edges of the pan. They’re all perfectly proportioned to the same size so they will cook evenly
8Bake for 25 minutes or until a toothpick comes out clean.
9If you don''t mind the extra calories, this muffin is great with a light glaze or with the addition of white choc chips (about 1 cup to the recipe as a last addition to the mix)
