Sequence Step
1Warm honey and oil over low heat, whisking frequently. Allow mixture to darken slightly, but don''t burn. While heating, stir together oats, almonds, coconut, sugar, salt, cinnamon, and cardamom in a medium bowl.
2While stirring, pour honey mixture over dry ingredients (all except ginger and chocolate). Stir to ensure the oats mixture is well-coated.
3Spread on a cookie sheet and bake for 20 min, stirring halfway. Allowing to cool completely before scooping from cookie sheet will retain some of those delicious clumps in your granola. If you prefer less clumps, scoop from cookie sheet and put into bowl while still warm.
4When cool, add diced ginger and chocolate pieces. Stir together, and enjoy!! :) Can be eaten as a snack right from the container, or served under a bit of milk or soymilk.
