Steps
Sequence Step
1Preheat oven to 375 degrees.
2Pour tomato sauce into bottom of 9x13 baking dish.
3Stir in garlic, onion, red pepper and olive oil.
4Layer alternating slices of eggplant, zucchini and yellow squash into the dish, allowing just a bit of each piece to show under the next.
5Drizzle remaining tsp of olive oil over the vegetables, and season with salt and pepper.
6Place chicken thighs evenly around dish, atop vegetables.
7Cover with tinfoil and bake at 375 for approximately 45-55 minutes.
