| 1 | In a large bowl, combine the drained black beans, corn, peppers and green onions. | 2 | Prepare couscous by bringing the water to a boil. | 3 | Place the couscous in a large bowl. Pour the boiling water over the couscous. Add olive oil and some salt and pepper. | 4 | Cover. Let stand for 5 minutes. Fluff with a fork. | 5 | Prepare vinaigrette by combining the wine vinegar, olive oil, mustard, garlic and salt and pepper. Whisk well to combine. | 6 | Add couscous to the bean/corn mixture. | 7 | Pour vinaigrette over . Mix well to combine. | 8 | Just before serving garnish with chopped cilantro. |
