| 1 | Preheat oven to 375. Grease muffin tin. | 2 | In large bowl, stir together flours, baking powder, baking soda, and salt. | 3 | In another bowl, mix applesauce and sugar together; beat in eggs. Stir in banana, milk, and vanilla. Add dry ingredients and stir to combine; stir in walnuts. | 4 | Spoon batter into greased muffin tin. Bake 25-30 minutes or until toothpick comes out clean (with applesauce the muffins will cook more quickly; keep an eye on them). | 5 | Removed muffin tin from oven, cool 5 minutes before removing from cups. These muffins are awesome warm or completely cooled! |
