ounceextra -sharp cheddar cheese

fluid ouncecold buttermilk

smallegg, beaten with 1 tablespoon milk (glaze)
Steps
Sequence Step
1Preheat oven to 400 F
2Combine first 6 ingredients in processor and blend
3Add butter and cut in, using on/off turns, until fine meal forms
4Transfer to large bowl and mix in the cheese (Can be prepared 4 hours ahead. Cover and chill.)
5Mix enough buttermilk into flour mixture to bind dough
6Turn out onto floured surface and knead gently until combined (about 10 turns)
7Pat out dough to 3/4-inch thickness. Using a 3-inch diameter cookie cutter, cut out biscuits. (You can also use a tea cup)
8Transfer biscuits to ungreesed cooke sheet. Brush biscuits with egg glaze and sprinkle with poppy seeds.
9Bake until golden brown and firm to touch, about 18 minutes. Swerve warm.
