Steps
Sequence Step
1Make a well with the flour and crack the eggs into it. Beat the eggs and add a little flour at a time. When it becomes a shaggy mess, add the water a little at a time until you have a nice, soft, but not sticky, ball. You may need more than 1/3 of a cup of water. Let rest for 30 minutes while you prepare the filling.
2Chop onion, sweet potato and lamb finely and mix together in a bowl with salt and pepper.
3Divide the dough into 1/4ths and roll out to 18th" thickness. Spread 1/4th of the mixture on one piece of dough and roll up into a coil, repeat with the second piece and attach to the first piece so you have one big coil. Repeat with other two pieces of dough so that you have two big coils.
4Steam for 45 minutes to an hour and serve with plain yogurt mixed with garlic.
